Job Responsibilities

Prepare and cook complete meals and individual dishes specializing in authentic Kerala and South Indian cuisine, including vegetarian and non-vegetarian dishes.

Prepare a variety of Kerala-style biriyani dishes from different regions of Kerala, including but not limited to Thalassery (Tellicherry) Biriyani, Malabar-style Biriyani, Kozhikode-style Biriyani, Ernakulam-style Biriyani, and Travancore-style Biriyani, following traditional recipes and standardized preparation methods.

Prepare authentic seafood specialties such as Fish Nirvana, Kerala fish curry, fried fish, coconut-based seafood dishes, and other regional delicacies using fresh ingredients and traditional spice blends.

Prepare traditional Kerala breakfast and snack items including appam, puttu, idiyappam, dosa, uttapam, vada, and related accompaniments.

Prepare spice mixes, marinades, masalas, gravies, sauces, and specialty ingredients according to authentic Kerala cooking practices.

Determine food portion sizes, monitor food quality, and help control food costs while minimizing food waste.

Plan menus and estimate food requirements in consultation with management to ensure efficient kitchen operations.

Requisition, receive, and maintain inventory of food, kitchen supplies, and equipment, and report shortages or quality concerns.

Prepare dishes for customers with food allergies or dietary restrictions by following established food safety procedures and customer requirements.

Inspect kitchen and food preparation areas to ensure compliance with food safety, sanitation, hygiene, and workplace health and safety standards.

Maintain cleanliness of kitchen workstations, cooking equipment, utensils, and food storage areas throughout each shift.

Train, guide, and supervise kitchen staff and helpers in food preparation techniques, safe food handling, hygiene practices, and quality standards.

Coordinate kitchen operations during service hours to ensure timely preparation and delivery of food.

Assist in organizing catering services, buffets, banquets, and special events when required.

Order kitchen supplies and equipment as required to maintain uninterrupted kitchen operations.

Assist management with overall kitchen operations and perform other related duties as assigned.
