Responsibilities
Tasks
- Prepare authentic South Indian dishes like dosa, idli, vada, and sambar with traditional techniques.
 
- Ensure proper fermentation and consistency of batters for idli and dosa.
 
- Cook rice-based dishes such as lemon rice, tamarind rice, and curd rice to regional standards.
 
- Grind fresh chutneys and spice mixes using traditional methods like stone grinders or blenders.
 
- Maintain cleanliness and hygiene in the kitchen area according to food safety standards.
 
- Monitor inventory and prepare shopping lists for South Indian ingredients like curry leaves, coconut, and spices.
 
- Use traditional cooking tools such as dosa tawa, idli steamer, and pressure cookers efficiently.
 
- Garnish dishes authentically using coriander, mustard seeds, and tempering techniques.
 
- Collaborate with kitchen staff to ensure timely service during breakfast and lunch rush hours.
 
- Innovate and adapt traditional recipes to modern tastes without compromising authenticity.
